The journey of one bottle, from hive to fridge

Sourcing, brewing, bottling, pasteurising. What each of those words actually involves.

Four stages, and the whole process is built around a single awkward decision made early on: no preservatives. Everything downstream follows from that.

Sourcing

Organic wildflower honey and responsibly sourced green tea leaves. Wildflower rather than a single-origin honey because it carries more character, and because the drink is built on it rather than merely sweetened with it.

Brewing

The green tea is brewed to gradually extract a strong flavour. Gradually is the operative word — pushed too hard, green tea turns astringent and no amount of honey covers it. The extract is then mixed with honey for sweetness and lemon juice for freshness.

Bottling

Into high quality recyclable glass, sealed with premium caps, so the drink arrives in the condition it left in.

Pasteurising

This is the stage the no-preservatives promise makes necessary. Pasteurisation is the final step in the cycle rather than the first: heat the sealed product, hold it, cool it. The drink is safe to keep at room temperature and retains its quality without anything being added to make that true.

It is a more demanding way to make an iced tea. It is the reason the ingredients list is as short as it is.
